Beryl's Chicken

I had a roommate several years ago that always used to cook for me some REALLY great stuff! I thought whoever married her would hit the jackpot.  Here is a chicken recipe that she used to make that NO ONE CAN RESIST!!!!

4-6 boneless skinless chicken breasts
1 package of fresh sliced mushrooms (from produce section)
1 package or container of cream cheese
1 cup fresh spinach (optional)
garlic salt
toothpicks

butterfly the chicken breasts so that they are the same length but are now 2 skinny breasts instead of one thick one.

in a bowl combine spinach cream cheese and mushrooms (good luck with this part I have always had to just use my hands)

Using your fresh clean hands take some of the mixture and lay it evenly on top of one of your chicken breast halves.  Then lay the other half on top of the mixture, you are essentially stuffing the breast.  Use toothpicks (2 for each chicken breast) to keep the chicken and stuffing together.  Repeat this step for all of your chicken breasts

Lay the stuffed chicken breasts on a baking pan and sprinkle with garlic salt.  Bake at 350 degrees for 30-45 minutes or until done.

Then in a pan on the stove combine:

1 tablespoon of brown deli mustard
3 tablespoons of honey
1 small bag of crushed pecans
1 tablespoon of butter

stir over medium-low heat until bubbly and has a glaze-like consistency.  Pour over chicken breasts and serve!  MMMMMMM!!!!! This one is to die for!  Thanks, Beryl for some good meals!!!!

German Potato Salad

This is a potato salad recipe that is too delicious to be true and includes ZERO mayonnaise!!!

1  5lb bag of new red potatoes
1 package of bacon
12 boiled eggs
1 large purple onion diced
salt and pepper
1/4 cup of apple cider vinegar (approximately -be careful, you can ruin it with too much!)

cook bacon in pan DO NOT MICROWAVE!!!
boil potatoes
boil eggs
chop onion


Once you have done all that, combine ingredients INCLUDING BACON GREASE!!!!!! and apple cider vinegar (slowly- remember too much apple cider vinegar can ruin it), break up bacon pieces.

Mash away with a masher (not a mixer!)

Salt and pepper to taste.

Serve warm. (never cold)

Everyone loves this one too!  It's not very common so it makes you look like a chef when you bring it to pot-luck night or your neighborhood barbecue!


Grandma's Broccoli Casserole

This has been one of my favorite recipes since I was a kid.  My grandma loved me the most because I ate everything she made and thought it was the best thing I ever put in my mouth.  Here is her broccoli casserole recipe

1 bag of fresh broccoli (boiled or steamed til tender)
1 can of cream of mushroom soup
1 egg
1 tablespoon of mayonnaise
salt and pepper

Mix the above ingredients in a square casserole dish

Cover the top with shredded sharp cheddar cheese ( cover completely the cheese is sooooo good!!!!!)

bake at 350 degrees for 35-45 mintues and all done!

Yum-Yum!

Mexican Chicken Soup

I made this yesterday and I couldn't have been more pleased with the results.  It is delicious and Glenn had 3 bowls.  It is a full meal.  You should double the recipe and freeze the rest for a meal or two later.  I wish I had.    
1 small to medium whole chicken   
Lift skin (do not remove the skin) and sprinkle with italian seasoning. Bake uncovered in baking pan at 350 degrees for 2 hours.  When finished baking pull out of oven and let cool off.  Once fairly cool pull chicken off of body in stringy bite size strips. Set aside.  
1 can of cream of celery 
2 tablespoons minced garlic 
1 large purple onion chopped 
1 tablespoon cilantro 
1 can or frozen bag of corn 
1 lime juice (approx 1/4 cup) 
1/4 tablespoon of red pepper 1 tablespoon of cumin  
Saute' ingredients in large pot for 5-7 minutes.    Add  
1 tomato cut up into small pieces 
1 can of diced tomatoes 
2 cans of chicken broth 
1 can of beef broth 
1 cup of minute rice 
1 large or 3 small avocados cut into bite size pieces. 
Add Chicken.  Stir and simmer for 30 mins and serve.  
Make grilled cheese sandwiches to go with if you'd like.  So so so gooooooood!  Everyone should love it!  It sounds like a lot or work but really its not.  You put the chicken in the oven and forget about it for a couple of hours while you soak in the tub with a glass of wine  ;-)
